Mixed Berry Cobbler

Who doesn’t love a warm and cozy cobbler?
A cobbler is basically bringing together pie, cake and shortcake into one delicious dessert. What’s not to love about that? Plus, cobblers are easy, made with only a few simple ingredients and can be baked in the oven or your slow cooker.
Top with whipped cream, ice cream (or both) and you have the perfect dessert for your next holiday get together, pot luck or really any night of the week.

Equipment

  • 9"x13" pan
  • Large mixing bowl (two)
  • Small mixing bowl

Ingredients

Filling

Topping

  • 2 ¼ cups Biscuit baking mix
  • ½ cup iO organic whole milk
  • ¼ cup Granulated sugar divided
  • 4 Tbsp Unsalted butter melted

Cinnamon-Sugar

  • ¼ cup Granulated sugar
  • 2 tsp Ground cinnamon

Additional Ingredients

  • Nonstick cooking spray
  • Whipped cream or vanilla ice cream for optional garnish

Instructions

  • Preheat your oven to 350° and grease/spray a 9"x13" pan

Filling

  • In large bowl, toss blueberries, strawberries, raspberries, baking mix and sugar; spread into even layer in prepared dish.

Topping

  • In separate large bowl, stir baking mix, milk, sugar and butter until incorporated; drop spoonfuls of dough over fruit mixture.

Cinnamon-Sugar

  • In small bowl, stir sugar and cinnamon; sprinkle over dough.
  • Bake cobbler 55 minutes or until top is golden brown and edges are bubbly; cool 10 minutes.
  • Serve cobbler topped with vanilla ice cream and/or whipped cream, if desired.

Notes

  • Slow Cooker Option: Prepare recipe as noted above, but using a 5-6 quart slow cooker. To bake, cover and cook on High for 4 hours or until the topping has puffed and the fruit is bubbling.
  • Frozen Fruit Option: Use three bags of iO organic frozen berry blend instead to add blackberries
  • Leftovers: Store for about 4 days in an airtight container in the fridge.
